Baby spinach salad with citrus fruits

  • 200 g baby spinach, raw
  • 40 g raspberries, fresh
  • 50 ml extra-virgin olive oil
  • 1 pcs orange, peeled, segmented
  • 1 pcs pink grapefruit, peeled, segmented
  • 1 pcs pomegranate, seeds only
  • 1 tbsp apple cider
  • 1 tbsp balsamic vinegar
  • 1 tbsp mustard
  • 1 tsp cane sugar
  • 1 pinch salt
Preparation

  1. Prepare the vinaigrette; combine the raspberries, apple cider vinegar, mustard, and balsamic vinegar in food blender.
  2. Process until smooth, gradually adding olive oil.
  3. Toss the baby spinach, orange, grapefruit, and pomegranate seeds in bowl; pour over prepared dressing and serve.
