Buns with egg surprise
370 g flour, all-purpose
230 ml water, warm
9 pcs eggs
2 pcs capia pepper, chopped
1 pcs egg yolk
3 tbsp milk
2 1/2 tbsp cane sugar
2 1/2 tbsp butter, unsalted, softened
2 tsp fresh yeast
1 1/2 tsp salt, fresh ground
In a mixing bowl, combine warm milk, warm water (reserving 1 tablespoon), yeast, and sugar.
Let sit for about 5 minutes or until your yeast is bubbly.
Add 1 egg and mix with the paddle attachment on low until the egg has broken.
Add the flour and salt then mix.
Once the flours are mixed in, add the butter and mix for about 1 minute.
Switch to the dough hook and mix on low speed for about 5-7 minutes until the dough is slightly tacky.
Transfer the dough to a lightly oiled bowl, cover, and let rise for about an hour or until doubled in size.
Meanwhile, hard-boil the remaining eggs and place in cold water. When cool enough to handle, peel. Finely chop the red pepper.
Once the dough has risen, divide it into 8 equal pieces; flatten each piece between palms, sprinkle with chopped pepper, and place the hard-boiled egg in the middle.
Fold dough around the egg and pinch edges to seal.
Place each ball on a large sheet pan that has been lined with parchment paper or a silpat. Press down slightly on the ball because you want it to be wider rather than taller.
Let these poof for 30 minutes to an hour or until almost doubled.
Whisk egg white and 1 tablespon water then brush the buns.
Preheat the oven to 200°C and bake for about 15-20 minutes or until the tops are golden brown.
Place on wire rack to cool slightly before serving.
