Cauliflower with spicy sausages meat

  • 1 head cauliflower, cut into florets
  • 3 pcs pork sausage, spicy type
  • 1 pcs red bell pepper, diced
  • 1 pcs onion, small, chopped
  • 250 g light Cheddar, grated
  • 2 clove garlic, peeled, sliced thinly
  • 2 tbsp parsley, fresh, chopped
  • 1 tsp olive oil

  1. Heat olive oil in medium sauce pan, over medium-high heat.
  2. Add onion and bell pepper; cook for 5-8 minutes or until tender.
  3. Remove the casing from the sausage then add meat to the onion. Cook until browned, using fork to break up the pieces.
  4. Meanwhile, place cauliflower florets in ceramic bowl, cover with plastic wrap, and microwave for 5 minutes.
  5. Transfer to the food processor and pulse until you have something like rice.
  6. Add cauliflower to the pan with sausages then cook for 8-10 minutes.
  7. Stir in fresh chopped parsley then season with salt and pepper.
  8. Oil a ceramic dish and pour the mixture in it. Smooth the surface then sprinkle the cheese on it.
  9. Put the dish into the oven and make the cheese melt and brownish.
  10. Serve it warm.
