Cherry-Almond Florentines

Florentines are very special and tasty cookies. When you understand the concept, you can make plenty of variations.

  • 140 g cane sugar
  • 100 g honey
  • 175 g butter, unsalted
  • 200 g almond flakes
  • 150 g cocktail cherries, sliced
  • 50 g all purpose flour
  • 50 g oatmeal
  • 200 g 70% dark chocolate

  1. Heat oven to 180°C
  2. Take a large saucepan and melt together sugar, honey, and butter. Don’t let it heat up; just what it needs.
  3. Add flaked almonds, sliced cherries, and flour. Mix well.
  4. Line a baking tray with baking paper.
  5. Spread the mixture onto the baking tray.
  6. Bake about 10-15 minutes, until it gets a golden colour. Set aside to cool down.
  7. Melt the chocolate in water bath.
  8. Take another baking tray with a baking paper and turn the Florentine onto it. Take the paper out. Don’t be surprised if Florentine is sticky. If you have wholes you can still fix it.
  9. Spread the chocolate on top. Let it rest again, until the chocolate hardens.
  10. Use cookie cutters to cut the Florentines to the shapes you like.
