Cinnamon-sugar grissini

  • 450 g all purpose flour
  • 100 g cane sugar
  • 250 ml water
  • 60 ml walnut oil
  • 2 tsp cinnamon, ground
  • 1 1/2 tsp dry yeast

  1. Sift flour, 1tsp cinnamon, and yeast in mixing bowl.
  2. Add half of sugar then stir until blended.
  3. Gradually add water and walnut oil, stirring until you get a soft dough.
  4. Transfer dough to a floured surface and knead until you get smooth dough; set in clean bowl and cover with plastic foil.
  5. Set in warm room for 60-90 minutes or until dough has risen.
  6. Transfer dough onto a floured surface and punch down to remove air.
  7. By using rolling pin, roll the dough to 0.5cm-thick rectangle shape.
  8. Using a pizza cutter, cut out the stripes, around 2cm wide.
  9. Preheat oven to 220°C and line baking sheet with parchment paper.
  10. Transfer strips onto baking sheet and set in warm place for 20 minutes.
  11. Bake grissinis after, for 10 minutes or until golden. Meanwhile, combine remaining sugar and cinnamon in small bowl.
  12. Set baked grissinis on wire rack and immediately sprinkle with cinnamon-sugar mixture.
  13. Serve when cooled to room temperature.
