Cold strawberry soup with pistachios

Convert baby food

  • 600 g strawberries, hulled, fresh (or frozen)
  • 150 g pistachios, chopped
  • 160 ml cream, half and half
  • 100 ml sour cream
  • 30 g cane sugar
  • 1 tbsp lemon juice, fresh

  1. In a blender or food processor, purée strawberries with half of pistachios.
  2. Pour into a large bowl and add cream, sour cream, sugar, and lemon juice. Stir until well-combined. Chill for 40 minutes.
  3. Sprinkle with chopped pistachios before serving.
