Crab cakes

  • 220 g crab meat, cooked
  • 50 g homemade mayonnaise
  • 3 slice almond bread, sliced
  • 3 pcs spring onion, chopped
  • 2 pcs eggs, whisked
  • 1 tsp olive oil
  • 1/4 tsp cumin, ground
  • 1/4 tsp celery flakes
  • 1/4 tsp pepper, fresh ground
  • 1/4 tsp ginger, ground
  • 1 pinch nutmeg, ground
Preparation

  1. Pulse almond bread in food processor for 5 minutes or until finely crumbled.
  2. Combine Paleo mayonnaise, spring onion, spices, and eggs in a medium bowl.
  3. Gently stir in crabmeat and breadcrumbs.
  4. Shape 8 patties or cakes and set aside.
  5. Heat olive oil in large skillet over medium-high heat and cook cakes for 4 minutes on each side, until golden.
