Cranberry plum sauce

  • 8 pcs plums, fresh, large, cut in 1cm pieces
  • 5 tbsp orange rind, from 2 oranges
  • 220 g cane sugar
  • 60 ml water
  • 4 tbsp orange juice, fresh
  • 2 tbsp cranberries, seeded
  • 1/4 tsp nutmeg, ground

  1. Place chopped plums, orange rinds, cane sugar, orange juice, cranberries, and nutmeg in heavy-bottom sauce pan.
  2. Cook over low-heat, for 50-60 minutes, stirring and coating once in a while, 'til the fruits become mushy and soft.
  3. Add water and let it simmer, partially covered, for another 10-15 minutes.
  4. Keep stirring often so the fruit doesn’t stick to the bottom of the pan. Add more water only if needed.
  5. Remove from the heat and set aside to cool to room temperature before serving.
