Figs with basil and prosciutto

  • 8 slice prosciutto, halved lenghtwise
  • 4 pcs figs, quartered
  • 1 bunch basil, (you will need leaves, whole, 16pcs)
  • 3 tbsp olive oil
  • 2 tsp red wine vinegar

  1. Cut the figs into 16 wedges then place in a  bowl.
  2. Mix together the oil and vinegar, then pour it over the figs. Season well with salt and pepper, and leave to marinate at room temperature for about 30 minutes.
  3. When the figs have been marinated, top with basil and wrap with proscuitto.
  4. Once done, set figs on a plate then drizzle over the remaining marinade.
  5. Serve at room temperature.
