Hazelnut-orange stuffing

  • 350 g bread crumbs, soft
  • 2 pcs eggs
  • 120 g hazelnuts, toasted, chopped
  • 120 g tart apples, peeled, chopped
  • 100 g celery stalk
  • 110 ml orange juice, fresh
  • 75 g onions, chopped
  • 2 tbsp lemon juice, fresh
  • 2 tbsp orange zest, approximately from one fruit
  • 60 g butter, unsalted
  • 1 1/2 tbsp lemon zest, approximately from one fruit
  • 1 pinch nutmeg, ground
  • 1 pinch black pepper
  • 1 tsp fresh ground salt
  • 1 tsp thyme, dried, crushed
Preparation

  1. Combine all ingredients in a bowl.
  2. Stir with wooden spoon until combined thoroughly.
  3. Stuff turkey with prepared filling and roast, depending on turkey weight.
  4. When done, remove all stuffing and keep warm.
  5. Serve with carved turkey.
