Honey cookies

  • 210 g cane sugar
  • 130 g whole-whear flour
  • 100 g icing sugar
  • 95 g all purpose flour
  • 110 ml honey
  • 100 ml canola oil
  • 3 tbsp milk
  • 1 tsp ginger, ground
  • 1 tsp cinnamon, ground
  • 1/2 tsp vanilla extract
  • 1/2 tsp nutmeg, ground
  • 1/2 tsp baking soda
  • 1/2 tsp fresh ground salt
Preparation

  1. Preheat oven to 180°C and line two baking sheets with parchment paper.
  2. In a bowl mix sugar, honey, oil, milk, and vanilla extract.
  3. Mix in flours, ginger, cinnamon, nutmeg, baking soda, and salt.
  4. Place rounded tablespoons 3 inches apart on a cookie sheet; dust with icing sugar.
  5. Flatten slightly and bake for 12 minutes.
  6. Set on wire rack to cool and serve after.
