Lemon - hazelnut stars

approx. 50pcs tiny stars

  • 400 g flour, sifted
  • 200 g hazelnuts, blanched, ground
  • 200 g unsalted butter, softened
  • 200 g icing sugar
  • 2 pcs lemons, washed
  • 4 pcs egg whites

  1. Combine the butter, ground hazelnut, and the sifted flour in a bowl; mix together with your hands to crumbs.
  2. Add the icing sugar, the grated peel and squeezed juice of the lemons, three egg whites, then mix well together.
  3. Pour the batter onto a floured working surface then knead well. Foil the dough and let it chill in the fridge for an hour (it can be overnight also, nothing bad will happen to it).
  4. After chilling, roll the dough out to approximately 0.3-0.5 cm thick, then cut the stars out with a tiny star-shaped cookie cutter.
  5. Line a baking tray with baking paper then place the stars on it.
  6. Wash the stars with the remaining egg white then sprinke with any decoration you wish - lemon peels, roasted chopped hazelnut, or sugar.
  7. Bake them in pre-heated oven for 10-15 minutes on 170°C, then take them out and let them cool down in the tray.
