Minestrone soup

  • 4 pcs tomatoes, chopped
  • 2 pcs carrots, chopped
  • 1 pcs green bell pepper
  • 300 g kidney beans, drained
  • 2 clove garlic
  • 1000 ml vegetable stock
  • 1 tbsp parsley, fresh
  • 2 pcs celery stalk, chopped
  • 425 g tomatoes, canned
  • 1 pinch salt
  • 1 pinch black pepper
Preparation

  1. Place celery, carrots, bell pepper, and garlic in large non-stick sauce pan.
  2. Stir to combine and cook for 5 minutes, with some oil.
  3. Add vegetable stock, beans and tomatoes to the pan; cover and bring to a boil over medium-high heat.
  4. Reduce heat to medium and simmer for 30 minutes, stirring occasionally.
  5. Season with sugar, salt, and pepper then serve in bowls.
