Roasted pears and red onions

  • 2 pcs onion, cut in 8 wedges
  • 4 pcs pears, quartered and cored
  • 2 tbsp sherry vinegar
  • 2 tbsp butter, unsalted, melted
  • 1 tsp coarse salt
  • 1 pinch freshly ground black pepper
  • 1 sprig rosemary, fresh
Preparation

  1. Preheat oven to 220°C.
  2. Combine pears, onion, vinegar, and melted butter in 18x26cm baking dish.
  3. Season with salt and pepper, then arrange pears and onion in a single layer; top with rosemary.
  4. Cover dish with foil and bake for 20 minutes.
  5. Remove folio and bake for 15-20 minutes or until pears are golden brown on bottom.
  6. Serve warm or at room temperature.
