Salmon with buttered mushrooms

  • 400 g salmon fillet
  • 200 g brown mushrooms, small
  • 50 g butter
  • 1/2 tbsp olive oil
  • 1 pinch sea salt
  • 2 tbsp squeezed juice of lemon

  1. Take the legs of the mushrooms away. Wash and dry the mushrooms and if needed, cut into 2 or 4 parts, to get a 1-cm cube.
  2. Cut the salmon fillet into 4 equal slices. Salt it in each side.
  3. Take a pan and put the butter and the olive oil. Melt the butter on the highest temperature.
  4. Add the mushrooms, salt it a bit.
  5. Bake the mushrooms in the butter for about 4-5 minutes to give them some colour.
  6. Take the mushrooms out and set aside.
  7. Put the salmon into the same pan and lower the temperature into middle.
  8. Add the lemon juice. Shake the pan to mix it a bit.
  9. Bake the salmon in the pan until you can see that it gets a nice baked colour. During baking (about 5 minutes), do not touch the salmon. It will be fine.
  10. Turn the salmon. Add the mushrooms.
  11. Bake the other side as well for about 5 minutes.
  12. It is ready to serve!

Serve with: steamed rice

If you are without kids, you can add some fresh ground pepper. And instead of lemon juice, add 30ml of dry white wine.
