Savory muffins

  • 170 g almond flour
  • 115 ml olive oil
  • 3 pcs eggs
  • 1 pcs zucchini, small, grated finely
  • 4 tbsp water
  • 2 tbsp bacon, cooked, chopped
  • 2 tbsp sun-dried tomato, chopped
  • 2 tsp basil, dried, chopped
  • 1 tsp baking powder
  • 1 clove garlic, peeled, minced
  • 1 pinch salt, table
Preparation

  1. Preheat oven to 180°C and grease 6-hole muffin tin with some olive oil.
  2. Combine flours, baking soda, and salt. Stir well.
  3. In small bowl whisk eggs, olive oil, and water.
  4. Fold wet into dry ingredients and stir well.
  5. Stir in chopped bacon, sun-dried tomatoes, grated zucchini, garlic, and basil.
  6. When well-combined, spoon the batter to greased muffin tin, to 2/3 full.
  7. Bake for 20-25 minutes or until firm to the touch.
  8. Serve when cooled to room temperature.
