Star-shaped cinnamon biscuit

for 30 pieces

  • 200 g almonds, blanched, finely ground
  • 200 g walnuts, ground
  • 350 g icing sugar
  • 3 pcs eggs
  • 1 tbsp lemon juice, fresh
  • 1 tsp cinnamon, ground

  1. Separate egg yolks from whites and beat whites in large bowl until stiff peaks form.
  2. Slowly sift in the sugar and add lemon juice; beat for 8 minutes.
  3. Set aside 4 tablespoons of egg whites mixture - this will be glaze.
  4. Add ground almonds, walnuts, and cinnamon in egg whites then mix well; cover and set in fridge for 1 hour.
  5. Preheat the oven to 160°C and line a baking tray with parchment paper.
  6. Sprinkle a working surface with icing sugar and roll the dough to approximately 0.5cm thick, then cut stars using a cookie cutter.
  7. Transfer the stars on the lined baking sheet then brush with reserved meringue.
  8. Bake cookies for 8 minutes and set on wire rack to cool.
  9. Serve after.
