Strawberry champagne soup

  • 250 g strawberries, hulled
  • 64 g raspberries, pureed
  • 220 ml coconut milk
  • 118 ml orange juice, fresh
  • 115 ml champagne
  • 1 sprig mint, leaves only
  • 1 tsp vanilla
Preparation

  1. Place strawberries, champagne, orange juice, coconut milk, vanilla, and mint leaves in food processor.
  2. Pulse until combined thoroughly.
  3. Serve in glass bowl and decorate with raspberry puree or coconut cream.
