Sweet potato stuffing

  • 180 g bread crumbs
  • 680 g sweet potatoes, baked and mashed
  • 75 g onion, chopped
  • 2 tbsp butter, unsalted
  • 1 1/2 tbsp sage, dried, chopped
  • 1 tbsp parsley, fresh, chopped
  • 3 tsp lemon zest, approximately from one fruit
  • 1 pinch fresh ground salt
  • 1 pinch freshly ground black pepper
  • 1 pinch nutmeg, ground
Preparation

  1. Melt butter in large skillet, over medium heat. Add onions and cook for 5 minutes or until translucent.
  2. Combine mashed sweet potatoes and breadcrumbs in large bowl.
  3. Add the sage, parsley, and lemon zest to the mixture.
  4. Season with nutmeg, salt, and pepper.
  5. Transfer the potato mix into the skillet; cook for 2-3 minutes or until very hot.
  6. Remove from heat and immediately stuff duck.
