Vegan Thanksgiving caramelized butternut squash

  • 2 pcs small butternut squash
  • 1 tbsp cane sugar
  • 6 tbsp coconut oil
  • 1 tsp salt
  • 1 tsp freshly ground black pepper

  1. Preheat oven to 200°C.
  2. Arrange the butternut squash slices on a baking sheet and drizzle with the melted coconut oil, sugar, salt, and black pepper. Use your hands to combine all the ingredients together and spread evenly on the baking sheet.
  3. Bake the squash for around 50 minutes as you turn frequently using a spatula until the squash is soft and the glaze starts to caramelize.
  4. Serve immediately.
