Vegetable patties

  • 225 g chickpeas, canned
  • 250 g sweet potato, boiled, without skin
  • 250 g zucchini, grated
  • 100 g bread crumbs
  • 2 pcs garlic, clove
  • 1 tbsp curry powder
  • 1 tbsp cumin, ground
  • 1 tbsp coriander, grounded
  • 1 pinch salt
  • 1 pinch black pepper
  • 3 tbsp olive oil
Preparation

  1. In a large bowl roughly mash chickpeas and boiled sweet potatoes.
  2. Add grated zucchini, breadcrumbs, crushed garlic, curry powder, ground cumin, ground coriander, salt, pepper and the oilive oil and mix well.
  3. Form mixture into patties.
  4. Heat a frying pan, brush with a little oil and cook patties on both sides for 10-10 minutes until golden brown.
