Prepare the syrup; place nectarines, plums, lemon juice, and cherries in the small sauce pan and simmer for 15 minutes on low heat.
When the syrup is cooked, set aside to cool slightly.
Meanwhile, prepare the pancakes; pre-heat waffle iron to low.
Place the walnuts in food procssesor and pulse until you get walnut flour; add coconut flour, coconut oil, eggs, honey, vanilla extract, coconut milk, baking soda, and salt in the food processor then pulse until smooth, for 1 minute.
Spoon the batter in the waffle iron and spread evenly.
Cook for 45 seconds and set aside.
When the syrup is almost cooled, insert hand blender then process until smooth and without chunks. Set aside for 10 minutes.
Spread the syrup over warm pancakes and serve immediately.
